Sponge Cake

A simple gluten-free, dairy-free sponge cake made without eggs, filled with jam and finished with icing sugar.

  • Kitchen scales
  • Mixing spatula
  • Cake tin
  • Wire cooling rack
  • Baking paper
  • Knife for slicing the cake
  • Measuring teaspoon
  • Measuring tablespoon

Before you start

Ingredients

  • 125g Sugar
  • 150g gluten-free flour
  • 1/2 a ripe banana
  • 6 tbsp sunflower oil, for the cake mixture
  • 4 tbsp water
  • 2 tbsp Jam
  • 1 tbsp Icing Sugar
  • 1 tbsp Vanilla Extract
  • 1 tsp oil, for greasing the cake tin

How to make it

Allow about 10 minutes to prepare and 35 minutes to bake, plus cooling time.

  1. Prepare the tin

    Weigh the ingredients and preheat the oven to 190°C. Lightly grease the cake tin with 1 teaspoon of oil, or line it with baking paper.

  2. Mix the batter

    Beat together the sugar, 6 tablespoons of sunflower oil and vanilla extract. Add half a banana and mash it into the mixture. Add the flour and water and mix well.

  3. Bake

    Pour into the cake tin and smooth to an even layer. Bake for 35 minutes.

  4. Cool and fill

    Let the cake cool on a wire rack. Slice it horizontally in half, spread jam over the base and put the top back on.

  5. Finish

    Dust the top with icing sugar.
