These flapjacks are brilliant for a healthy snack. These are very simply to make although they require a large amount of ingredients, hence the medium rating. Don’t be put off by this because they are definitely worth making.


Ingredients:
– 1 cup of pre-soaked chopped dates
-3/4 cup of extra virgin coconut oil
– 1/2 cup of honey (NOT maple syrup)
– 2 cups of free from oats 
– 1 cup of grounded almounds
– 3/4 cup broken banana chips or 3/4 of a banana
– 1/2 cup of chopped pecans
– 2 teaspoons of grated nutmeg (or powdered nutmeg)
– 1/2 cup of sunflower seeds 
Equipment:
– Hob
– Oven
– Mixing bowl
– Pan
– Baking tray
– Non-stick baking papater
– Spatula

Sponge Cake (G, D, A)

A delicious gluten-free dairy free cake can be made ever so simply. No eggs required. Simply to make and you can clean that bowl out nicely at the end.


Ingredients:
– 125g Sugar
– 150g Flour
– 1/2 a ripe banana
– 6 tbsp Sunflower oil
– 4 tbsp water
– 2 tbsp Jam
– 1 tbsp Icing Sugar
– 1 tbsp Vanilla Extract
– 1 tsp Oil
Equipment:
– Oven
– Mixing Bowl
– Food Scales
– Mixing Spatula
– Cake Tin
– Wired Cooling Rack
– Grease Proof Baking Paper

Prep – 10 mins

Cooking35 mins


Instructions

Pre-requisites:
– Weigh out ingredients
– Pre oven to 190Degrees C
– Lightly Greaseproof (with oil or paper) cake tin


Mixing

1) Beat together, sugar, oil and vanilla
2) Add half a banana to the mixture and mash/mix it together
3) Add flour and water into the mixture and mix well


Cooking

4) Pour mixture into cake tin and smooth to an even layer
5) Cook for 35 mins


Preparing

6) Let cool on a wire rack
7) Slice cake horizontally in half
8) Spread jam on the base and place the top back on
9) Add Icing sugar to the top
