Gluten Free Dairy Free Red Meat Free Saffron & Thyme Chicken

Rating – Easy/Medium
This is not too complex to make but it can take a bit of time to get everything sorted and marinated.
– 600g Chicken Breast
– 40g of carefully stripped Thyme
– 2 large pinches of saffron
– 2 tbsp of boiling water
– 2 large heaped tsp of crushed sea salt
– 2 tbsp Garlic Oil
– Ground black pepper
– Chopping Board
– Sharp Knife
– Bowl
– Pestle & Mortar
– Fridge (for marinating)
– Frying Pan/griddle/BBQ
– Hob

Prep – 25 mins
Marinating – 1-5 hours
Cooking – 10-15 mins
Instructions
For best results: cook on a BBQ
Marinade
1) Grind saffron with pestle & mortar then pour 2 tbsp of boiling water on top. Leave for 20 mins
2) Finely chop the thyme
3) Cut chicken into chicken fillets
4) Put chicken into a bowl and pour the saffron water, finely chipped thyme, garlic oil, crushed salt and a health seasoning of pepper onto the chicken. Mixing well to make sure all of the chicken has been covered by the ingredients.
5) Cover bowl in cling film and refrigerate for a minimum of 1 hour
Cooking
Pre-requisites:
– Heat Frying pan/griddle with medium-high heat on hob (with olive oil)
or
– Pre-heat BBQ
6) Frying Pan/Griddle – Fry the chicken fillets for 3-4 mins on each side or until golden brown.
BBQ – Cook for around 5-6 mins each side. Make sure chicken is thoroughly cooked before serving.
