Gluten Free, Dairy Free, Red-Meat Free Bolognese
Low Acid Rating
Rating – Easy
Most bolognese are tomato based which significantly increases the acid rating. In these recipe we will use a small amount of tomato puree mixed with water to create a small amount of sauce for this dish.
– 400g Diced Turkey
– 2 tbsp of Mix Herbs
– 3 tbsp of Turmeric
– Leeks (Frozen)
– 90g Tinned/Normal/Frozen Mushrooms
– 1 Chopped/crushed Garlic Clove
– 3 tsp Tomato Puree
– 2 tsp Salt
– Pepper
– 1/2 – 1 cup of water (note: the more water added the more the flavour is diluted)
– Wok
– Hob
– Spatula

Preparing – 1-2 mins
Cooking – 17-25 mins
Instructions
Pre-requisites:
– Pre-heat Wok @ medium-high temp
1) Heat leeks and frozen/normal mushrooms in a pan at high heat for around 4-5 mins
2) Add the mince turkey into the wok. Mix until turkey is completely sealed.
3) Add salt and pepper, and Turmeric into the wok and mix.
4) Now add tomatoe puree, 1 small cup of water , the chopped garlic and a sprinkle of mixed herbs.
Note: Cooking time needs to be adjusted depending on how much thick you want the sauce (add more water and tomato puree depending on how thick and how much you require)
5) Cook for around 8-10 mins
